Baker, Chief Cook & Steward Offshore vessel & Platform

* Night Cook Baker:

– Salaries      : $ 62 per day

Context

The field of work involves the pre-preparation and fresh preparation of standard meals in the kitchen of a main platform. The meals involve breakfast, lunch and dinner, whereby, depending on the arrangements made with the client, a standard menu is prepared. The Cook/Baker (also called ‘assistant cook’) works in accordance with the planning and purchasing done by the Chef Manager or Day Cook. Owing to the limited supply possibilities, a great deal of food is pre-prepared or freshly prepared on site. Bread and pastries are freshly baked, fish is cleaned and filleted, and meat is boned, processed and divided into portions. Depending on how busy it is in the kitchen, Stewards are deployed to support the kitchen staff. The official language on the platforms is English. The Cook/Baker may be deployed both during the day or the night. During day shifts, with the exception of bread baking and breakfast, the Cook/Baker works under the supervision of the Chef Manager or Day Cook. During night shifts, the Cook/Baker independently prepares hot meals and operationally supervises one Steward. During these shifts, within the indicated margins (quality, costs and available supplies), to a certain extent the Cook/Baker is free to create menus.

* Day Cook / Chief Cook:

– Salaries      : $ 57 per day

Context

The field of work involves the pre-preparation and fresh preparation of standard meals in the kitchen of a main platform with hotel accommodation. The hotel accommodation has a maximum on-board capacity of 200 people. There is a relatively high diversity and turnover of people in the hotel that accommodates guests as well as temporary/permanent employees. The meals involve breakfast, lunch and dinner, whereby, depending on the arrangements made with the client, a standard menu is prepared. The Day Cook works in accordance with the Camp Boss’s planning and purchasing. Owing to the limited supply possibilities, a great deal of food is pre-prepared or freshly prepared on site. Bread and pastries are freshly baked, fish is cleaned and filleted, and meat is boned, processed and divided into portions. Depending on how busy it is in the kitchen, Stewards are deployed to support the kitchen staff. The official language on the platforms is English. The position of Day Cook only exists on the larger hotel accommodation platforms and, as a cooperating supervisor, the Day Cook is responsible for the operational management of the kitchen. The kitchen staff on hotel accommodation platforms work on the basis of continuous shift work.

* Steward:

– Salaries      : $ 42 per day

Context

The field of work involves cleaning, laundering and supporting kitchen work. Cleaning involves the daily cleaning and periodic deep cleaning of cabins (i.e. sleeping/living quarters, bathrooms and toilets) and general areas (i.e. recreation and office areas). Laundering involves the washing and drying of clothing, bedding, towels, etc. The supporting kitchen work involves the cleaning of kitchen areas, washing up, setting the tables as well as simple preparation tasks such as cutting and washing vegetables, making dressings at the request of the immediate superior and following clear instructions. The official language on the platforms is English. Depending on the type of platform, the Steward’s function constitutes one or all fields of work. The Steward is deployable on different platforms.
